Our Offering - Kokum Butter


Natural Kokum Butter (KB) is the byproduct of Garcinia Indica Choisy fruit processing industry and is obtained from the mature seeds of Garcinia Indica fruit. Garcinia seed kernel is an important source of fatty acid with a yield of 25-35% butter. The key fatty acid i.e. Stearic acid and Oleic acid content of the fruit is around 49.33 and 34.42 % which is quite high compared to many other vegetable oil as well as other seeds. The butter is solid in room temperature and has pleasant appearance as well as aroma. It is one of the most structurally and chemically stable plant butters available and has been used for decades in the country side of Konkan region of India. The melting point of butter is high (40°C), which makes it an ideal ingredient for several industries as mentioned below.

CBE(Cocoa Butter Equivalent) value
for Kokum Butter is 5%. It has been reported to have a very high symmetrical SOS content ( above 80% ). Therefore, useful for direct (without any fractionation) blending with palm mid-fraction for preparing cocoa butter equivalents.
